It is summer time and kids are always craving for ice cream or popsicles. I prefer the idea of popsicles because they are lighter, you can use just juices and/or fruit and the little ones can make almost the entire “cooking” process, they are the perfect summer snack.

Kids love the idea of preparing popsicles by themselves. This activity includes a succession of steps like mixing ingredients, pouring liquid from a container to the molds, using shapes molds. Unfortunately, there is something in the process they don’t like at all and that is to wait the popsicles to get frozen.


Pineapple ( 1 can of pineapple. Blend the pineapple and the juice in a food processor.).

Coconut milk. ( ½ can).

Lemon juice. 1 lemon.

Sugar (This is optional, we used sweet lemons and we ended up not using it).

Strawberry puree. ( This is an add on to put a hint of color).

Process: Adults blend the pineapple and its juice in the food processor until the mix is smooth. Later, kids mix the pineapple with the coconut milk and the lemon juice using a whisk or a spoon.  Then, the kids pour the mix in the molds, letting a little space. The last step is to add couple of drops of strawberry puree.

The popsicles have to be in the freezer for a minimum of 2 hours.
